One of the best things I like about the Vitamix is that you can make the most amazing healthy ice creams and sorbets. All natural and good for you, free from refined white sugar, preservatives and artificial ingredients. Combining dates, frozen banana and macadamia nuts make the most amazing ice-cream that’s actually good for you.
What it’s good for
Dates give a lovely natural sweetness that replace refined sugar in all your dessert recipes. They are high in minerals, potassium, chromium, maganesium and iron.
Bananas are high chromium to help stabilize blood sugar levels and Raw Cacao ( cocoa powder) is high in magnesium and iron and contains more antioxidants than red wine or green tea. Macadamia nuts are a great source of monounsaturated fats that can help to lower cholesterol.
Time it takes: 1 minute
Serves: 8 - 10
Ingredients
4 tablespoons macadamia nut butter
400 g frozen chopped bananas
8 fresh mejool dates
2 cups ice,
2 tsp vanilla extract
Method
Combine nut butter, bananas, dates, ice and vanilla in the order listed into your Vitamix container and secure the lid.
Select Variable 1.
Turn on your machine on and quickly increase speed to variable 10 and then to high.
Use the tamper to press the ingredients into the blades. Mix should be lovely soft and creamy in about 30 seconds.
Serve straight away or freeze for later use.
Enjoy alone or in bowls drizzled with chocolate fudge sauce.
To make the chocolate fudge sauce take 1 heaped tablespoon of your macaamia nut butter and mix with 1 tablespoon of either ( maple syrup or agave ) if using honey use 1 teaspoon. Plus 1 teaspoon cocoa powder and a little hot water (2 – 3 tbsp) enough to mix into a smooth chocolate fudgy syrup. Drizzle over the ice cream and enjoy.
